Cajun Roux has officially opened its doors in the Village of Providence, bringing the bold flavors of Louisiana to Huntsville. The Birmingham-based restaurant is known for authentic Cajun dishes, generous portions, and a lively bayou-style atmosphere. Now, locals can experience it without leaving town.
A Louisiana Story Coming Full Circle
Owner Jeff Thompson first introduced Alabama diners to Cajun cuisine back in the ’90s, starting with a humble roadside crawfish stand. It wasn’t glamorous, but it quickly proved that people were hungry for the real deal.
Over time, that small stand grew into full-service restaurants, including Cajun Steamer and now Cajun Roux. Thompson says the goal has always been the same: serve fresh seafood, keep prices reasonable, and share genuine Cajun hospitality.
What’s on the Menu
Cajun Roux offers an extensive lineup of classics, and the menu reads like a tour of the bayou. Guests will find appetizers like Gator Bites, Zydeco Shrimp, Cajun Bourré Eggs, and Roux Seafood Dip.
For mains, dishes range from gumbo and étouffée to seafood platters, po’boys, short ribs, pasta dishes, and blackened or fried Gulf fish. They also serve full steam pots—with crab legs, oysters, and royal red shrimp—plus Southern sides like dirty rice, fried green tomatoes, mac and cheese, and smoked gouda grits.
And of course, no Louisiana-inspired meal is complete without dessert. Cajun Roux finishes strong with bread pudding, beignets, and a rotating cheesecake of the day.
