Bakeries in Huntsville are feeling the impact of rising egg prices, a challenge driven by the recent Avian Flu outbreak.

Eggs are a key ingredient in many bakery items, with local shop owners noting they go through dozens each week. At The Moon Bakeshop in downtown Huntsville, eggs are among the most frequently used ingredients, with the bakery using close to 60 dozen weekly. Batter Up Cake Bakery reports an even higher demand, using between 90 to 120 dozen eggs per week.
Significant Increase in Egg Prices
Owners say the rising cost of eggs is making operations more challenging. One bakery owner recalled that in summer 2024, 30 dozen eggs cost around $65 to $68. However, a recent order of just 15 dozen eggs was priced at $119, marking a substantial increase in cost for fewer eggs. Another bakery reports a 300% rise in egg prices, leading to adjustments in how they manage ingredients.
Adjusting to Higher Costs
In response to the price surge, bakers are minimizing waste and modifying recipes. Some are ensuring full use of every part of the egg, including whites and yolks, while also testing products that require fewer eggs.
Despite these adjustments, owners say they are trying to avoid raising prices for customers by shifting expenses away from other investments, such as equipment purchases.
Long-Term Outlook on Prices
The USDA reports that 18.8 million commercial egg-laying hens were affected by HPAI (Bird Flu) in January 2025, the highest single-month loss since the outbreak began in 2022. Due to these disruptions, egg prices were 53% higher in January 2025 compared to the same time in 2024, with further increases expected this year.
The Alabama Poultry & Egg Association noted that most eggs sold in the state are imported from other parts of the U.S., as Alabama farms primarily focus on poultry production. Industry experts suggest that prices may decrease after Easter, but for now, both businesses and consumers will need to adjust to the higher costs.
